Caramelized Balsamic Onions

When I met my husband, the one thing he would NOT eat was onions... these are how I made him fall in love with onions in our meals ;)

What Ingredients You Will Need:
1 Large Vidalia Onion
1 Tbsp Olive Oil
1 Tbsp Minced Garlic
2 Tbsps Balsamic Vinegar
Black Pepper and Seasoning Salt to taste
Directions to Deliciousness:
Peel and halve your onion. Slice into 1/2 inch slices
Preheat your non-stick skillet with the olive oil and add onions and minced garlic into the hot skillet (turn on your hood fan if you have one... this part kills your eyes)
Saute until the onions become clear and golden brown - Stir and mix onions often to ensure they caramelize evenly
Once onions are caramelized, reduce heat to medium-low add the balsamic vinegar to the pan and season with black pepper and seasoning salt (this part burns your eyes even more!)
Saute until the vinegar becomes thick and cooks into the onions while stirring often to make sure they are coated and caramelized evenly
Best served in wraps, stuffed in chicken breasts, on salads, in omelettes, on pulled pork sandwiches... the list goes on. There are always left overs with only two of us in the house, so save the rest in the refrigerator for another meal!
