Peanut Butter Pancakes with Chocolate Chips (Buckeye Pancakes)

Are you tired of bland pancakes and want to switch it up?? These peanut butter pancakes are nice and fluffy and a delicious change to your normal breakfast routine! Add chocolate chips and/or a little chocolate sauce and you have buckeye pancakes... yummm



What Ingredients You Will Need:


  • 2 Cups All Purpose Flour

  • 1/4 Cup Granulated Sugar

  • 4 tsps Baking Powder

  • 1/2 tsp Salt

  • 1/4 tsp Baking Soda

  • 1 3/4 Cups Milk

  • 2 1/2 Tbsps Creamy Peanut Butter - Melted

  • 1 1/2 Tbsps Butter - Melted

  • 2 tsps Pure Vanilla Extract

  • 1 Egg

 

 

Directions to Deliciousness:


  1. In a large bowl - combine and whisk together the dry ingredients - flour, sugar, baking powder, baking soda, and salt

  2. In a microwave safe bowl, melt the butter and peanut butter together in the same bowl for 30 seconds

  3. In a medium sized bowl - combine and whisk together the wet ingredients - milk, butter, peanut butter, vanilla, and egg

  4. Make a well in the center of the bowl/ mixture of dry ingredients

  5. Slowly add in a 1/4 of the wet ingredients at a time and start to whisk into the dry ingredients

  6. Once all ingredients are combined, the batter should be as smooth as you can make it and it should drip off of your whisk easily ( If the batter seems too thick - add a little more milk, if the batter seems too thin - add a little more flour until desired consistency)

  7. Heat your skillet over medium heat and spray with non-stick spray or use melted butter

  8. Pour batter (I usually use a 1/4 or 1/3 cup measuring cup to try to make all pancakes a similar size) into skillet, add chocolate chips if desired and press into the batter

  9. While cooking - wait for bubbles to form on the top side before flipping - this means the bottom is crisping and becoming golden brown - patience pays off!

  10. Best enjoyed with a little bit of chocolate sauce and syrup drizzled on top!
