Southwest Egg Scramble

I made do with what I had in the house during the recent quarantine... and my husband fell in love...

What Ingredients You Will Need:
2-3 Whole Eggs
Minced Green and Red Peppers
Chopped Balsamic Caramelized Onions (Please reference my Appetizers & Sides Page)
Sliced Portobello Mushrooms
1/2 Tbsp Soy Sauce
1/2 Tbsp Butter
Brie Cheese
Sliced Avocado
Cajun Seasoning, Black Pepper and Seasoning Salt to Taste
Directions to Deliciousness:
Warm and melt 1/2 Tbsp of butter in a saute pan and add the sliced portobello mushrooms, green and red peppers, soy sauce, cajun seasoning, black pepper, and seasoning salt when hot
Let the above saute for at least five minutes or until mushrooms and peppers are cooked
Remove the cooked vegetables from the pan, re-spray the pan with cooking spray, and crack 2-3 scrambled eggs into the seasoned pan - cook completely
Build the cooked eggs into a mound in the center of the pan and place on top of the eggs the sliced Bree cheese and sautéed vegetables ... cover the pan with a lid to allow the cheese to melt
Once the cheese has melted, scrap the above mound of deliciousness onto a plate and top with freshly sliced avocado... and maybe your favorite hot sauce... and Enjoy! :)
